The rise of the Easter men!

Bleinheim 039With Easter and the long weekend (yes!) coming up I thought I’d whip up a tin of Easter biscuits for my colleagues at work. The plan was to do them in Easter shapes, my favourite being the hare below.

However there was loads of dough left so the Easter man was born!

Bleinheim 040To make your own Easter men (or shapes of your choice) you will need…

  • 125g/4oz butter
  • 75g/3oz caster sugar
  • 1 egg (separated)
  • 200g/7oz plain flour
  • pinch of salt
  • 1/2 teaspoon mixed spice
  • 1/2 teaspoon ground cinammon
  • 50g/2oz currants
  • 25g/1oz chopped mixed peel
  • 2 tablespoons milk
  • caster sugar (or flavoured sugar, I like to use Vanilla) for sprinkling on top

Method

  1. Preheat the oven to 200c/400F/gas mark 6.
  2. Cream together the butter and sugar and beat in the egg yolk.
  3. Sift together the flour, salt and spices. Fold into the creamy mixture also adding the currants and peel before starting to mix. Add the milk to make a soft dough (if it doesn’t come together at first panic not, just add a little bit more milk)
  4. Knead lightly on a floured surface and then roll out to 8mm/1/4 of am inch thick. Cut out using your choice of cutter and place the shapes onto a baking tray.
  5. Bake in the oven for 10 mins then remove, brush with the egg white and sugar, return to the oven & bake for a further 10/15 mins till they look golden.
  6. Leave to cool and then enjoy!
